Vegetarian Frittata Loaf

This dish makes a somewhat regular appearance in our kitchen! It ticks all the best boxes (quick, easy, Freddy will happily eat it…) and tastes scrumptious! It’s both filling and satisfying, so it’s great for an on-the-go meal, but I often serve slices alongside an easy salad, some lemony smashed avo or a generous dollop of homemade sauerkraut for a simple lunch or light dinner at home too. Baked Lemon Cheesecake

This rustic looking, decadent dessert is a tried and true crowd pleaser. I adapted the recipe from Sarah Wilson’s Lime and Coconut Cheesecake after someone generously donated a whole bunch of home grown lemons to us, and knew immediately that it was a keeper! The ever important tang of lemon is perfectly balanced with sweetness, and the whole thing is both sugar and gluten free! Fruity Frozen Yoghurt

Despite the current climate, I have had mad cravings for fro-yo of late. This recipe is both dairy free and refined sugar free, and it hits the spot every time! It’s sweet, creamy, tangy and ice-cold, and it takes just seconds to whizz up!

Serves 2 (or, occasionally, one very greedy Courtney)


2 freshly frozen medium bananas
Generous 1/2 cup of frozen mixed berries
1 tbsp vanilla protein (I use a vegan sprouted brown rice protein sweetened a little with stevia)
1/4 cup almond milk
3 heaped tbsp natural coconut yoghurt (I used the delicious CO YO natural coconut yoghurt)


Pop everything into your blender and blitz until smooth and creamy! I use an Omniblend blender at home, and to achieve a really smooth and creamy consistency, I start out on low speed until everything is roughly mixed and then give it about ten seconds at full speed. Voila!

This fro-yo would be lovely topped with cacao nibs, carob chips, chopped nuts, goji berries, granola… You name it! I have also been known to add a heaped tsp or two of maca powder to the blender for added superfood benefits.

THE Stir Fry

I was first introduced to this recipe a few years ago when my sister-in-law whipped up a huge batch to feed my husband’s (equally huge) family, and I have never looked back! Best stir fry recipe of all time thanks Lizzie!

What I love most about this recipe is the combination of fresh, yummy flavours (although this also means mandatory seconds for me EVERY TIME)! It’s hearty, warming and simple, making it a great addition to your meal rotation, especially now that the cooler weather is upon us once again. I like to put some brown rice on to cook in the rice cooker just prior to starting the stir fry – 1 cup brown rice to two cups of water, plus a splash each of tamari and apple cider vinegar. The Most Scrumptious Creamy Tahini Dressing!

I am not exaggerating when I say that we go through a jar of tahini every. single. week. here at the Elkins mansion. It is one of my best and most FAVOURITE things (to eat) in the world!

The Green Smoothie

Some time ago – never mind how long precisely – I found myself bombarded with talk (and posts) of green juices and smoothies. I wondered if this was just a trend, and not actually as all-important for our health as some were making it out to be, but – being the food/health lover that I am – I looked further into the green revolution. And jumped right on board!

Nowadays, I kick off most mornings with a green juice or smoothie, and I must say I really enjoy the ritual. In fact, the whole family shares a pitcher – my one year old Freddy is the latest addition to the craze… As soon as we pour the green goodness into our glasses, he starts hanging off us – howling with a pitiful fake cry until he has successfully acquired a bright green moustache.

Salted Choc-Orange Bliss Balls and a Word About Sugar

These bliss balls are like healthy versions of truffles! Rich with sweet jaffery goodness and buttery soft – they go down a treat with an almond milk chai tea or latte – and they are incredibly easy to put together!

The Lowdown on Soaking Nuts and All That Jazz

I know, I know; it all sounds very strange and silly. But the reality is the practice of soaking is very important for keeping your tummy happy (and super easy to accomplish) so stay with me!


What’s with all the soaking?

Nuts, seeds, grains and legumes all contain a nutritional inhibitor and toxic substance called phytic acid that makes them very hard to digest. Eating too much of these foods without treating them can lead to nasty things like digestive issues, mineral deficiency and bone loss, as the phytic acid latches onto calcium, magnesium, copper, iron and zinc in the intestinal tract and block their absorption and goodness.

You see, in the days of old, after these foods had been harvested, they were stored outside in the open and exposed to the elements, which helped to naturally break down all their bad bits and bring about germination – or sprouting.
